Ingredients
1 prepared 9-inch pie crust (graham, shortbread, or chocolate cookie)
1.5 cups cherry pie filling
8 ounces cream cheese, softened
0.75 cup powdered sugar (divided use)
1 teaspoon vanilla extract
1.25 cups heavy whipping cream (divided use)
1 cup semi-sweet or dark chocolate chips, melted
1 cup whipped topping or additional whipped cream (optional)
0.25 cup chocolate chips or shavings (for garnish)
6 to 8 fresh or maraschino cherries (for garnish)
Instructions
1. Prepare your crust: if using homemade, mix crumbs and butter, press into a 9-inch dish, and chill for 30 minutes or bake for 8–10 minutes at 350°F. Let cool.
2. Spread the cherry pie filling evenly over the crust and set aside.
3. Melt chocolate chips until smooth, then let cool slightly.
4. In a bowl, beat the cream cheese with 0.5 cup powdered sugar and vanilla until smooth.
5. Fold the melted chocolate into the cream cheese mixture until fully combined.
6. Whip 0.75 cup of the heavy cream to soft peaks, then gently fold it into the chocolate mixture.
7. Spread the chocolate layer over the cherry filling and smooth the top.
8. In a separate bowl, whip the remaining 0.5 cup heavy cream with 0.25 cup powdered sugar to soft peaks.
9. Spread the whipped cream over the chocolate layer.
10. Garnish with additional cherries and chocolate chips or shavings.
11. Refrigerate for at least 4 hours or overnight before serving.
Notes
Make sure the cream cheese is fully softened before mixing for a smooth chocolate filling.
Chill the pie at least 4 hours for the layers to fully set and slice cleanly.
Use a hot knife (wiped clean between cuts) for the cleanest slices.
