  • 12 ounces chocolate (dark, milk, or semi-sweet)
  • 1 teaspoon coconut oil (optional, for smoother melting)
  • ½ teaspoon sea salt (optional, for enhanced flavor)
  • ¼ teaspoon cinnamon (optional, for warmth)
  • ½ teaspoon vanilla extract (optional, for extra sweetness)
  • Caramel drizzle or dried fruit (optional, for added texture and flavor)

Instructions

  1. Prepare the Baking Sheet – Line a baking sheet with parchment paper or a silicone mat.
  2. Toast the Cashews (Optional) – If using raw cashews, lightly toast them in a dry pan over medium heat for 3–5 minutes until fragrant. Let them cool.
  3. Melt the Chocolate – Use a double boiler or microwave to melt the chocolate, stirring frequently to ensure a smooth consistency.
    • Double Boiler: Place a heatproof bowl over simmering water and stir chocolate until melted.
    • Microwave: Heat in 15-20 second intervals, stirring in between until fully melted.
  4. Coat the Cashews – Add the cashews to the melted chocolate and stir until fully coated.
  5. Form the Clusters – Using a spoon or cookie scoop, drop small mounds of the chocolate-covered cashews onto the prepared baking sheet.
  6. Add Toppings (Optional) – Sprinkle sea salt, cinnamon, or caramel drizzle over the clusters.
  7. Let Them Set – Allow the clusters to set at room temperature for 1-2 hours or refrigerate for 20-30 minutes until firm.
