Ingredients
1 lb ground beef (80/20 blend recommended)
1 to 2 chipotle peppers in adobo sauce, finely chopped
1 tablespoon adobo sauce
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and black pepper to taste
1 ripe avocado
1/4 cup sour cream or Greek yogurt
1 tablespoon lime juice
1 small garlic clove
1 tablespoon chopped cilantro (optional)
Salt to taste
2 brioche buns, sliced and toasted
2 slices Monterey Jack or Pepper Jack cheese
1 avocado, sliced
1 to 2 Roma tomatoes, sliced
Green leaf or romaine lettuce leaves
Instructions
1. In a food processor or blender, combine avocado, sour cream (or yogurt), lime juice, garlic, cilantro, and salt. Blend until smooth and creamy. Cover and refrigerate.
2. In a large mixing bowl, combine ground beef, chopped chipotle peppers, adobo sauce, smoked paprika, garlic powder, onion powder, salt, and pepper. Mix gently until just combined.
3. Divide the meat into 2 patties and shape evenly. Chill for 15 to 30 minutes to firm them up.
4. Heat a grill or cast iron skillet over medium-high heat. Cook the patties for 4 to 5 minutes per side or until internal temperature reaches 160°F. Add cheese in the last minute and cover to melt.
5. Toast the brioche buns lightly in a pan or toaster until golden brown.
6. Spread avocado sauce on the bottom bun. Place the cooked patty with melted cheese on top.
7. Add sliced avocado, tomato, and lettuce. Cover with the top bun.
8. Serve hot with your favorite sides like sweet potato fries or elote.
Notes
Store leftover patties in the fridge for up to 3 days. Avocado sauce is best used within 48 hours and should be covered tightly with plastic wrap touching the surface to avoid browning. For meal prep, patties can be formed and frozen uncooked for up to 3 months.
