A quick and flavorful Chicken Zucchini Stir Fry with juicy chicken breast, crisp zucchini, and a savory garlic-ginger sauce. Perfect for weeknight dinners, it’s healthy, fast, and full of vibrant color and texture.
Ingredients
- 1 lb boneless skinless chicken breast, thinly sliced
- 2 medium zucchinis, sliced into half-moons
- 1 red bell pepper, sliced
- 1 small yellow onion, sliced
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, minced
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- 2 tablespoons vegetable oil (divided)
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Slice chicken, zucchini, bell pepper, and onion evenly. Mince garlic and ginger.
- In a bowl, combine sliced chicken with 1 tablespoon soy sauce, cornstarch, and 1/2 teaspoon sesame oil. Let marinate for 10 minutes.
- Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken in a single layer. Cook until browned and just cooked through, about 4-5 minutes. Remove and set aside.
- In the same pan, add remaining oil. Sauté onion, zucchini, and bell pepper for 3-4 minutes.
- Stir in garlic and ginger. Cook for 30 seconds until fragrant.
- Return chicken to the pan. Add oyster sauce, remaining soy sauce, and red pepper flakes if using.
- Stir fry for 1-2 more minutes until everything is coated and heated through.
- Turn off heat and drizzle with remaining sesame oil. Serve hot.
