Ingredients
2 medium zucchinis, thinly sliced
2 cups cooked chicken breast, cubed or shredded
3 medium potatoes, peeled and thinly sliced
1 small red bell pepper, diced
1 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
2 cloves garlic, minced
1/2 small onion, finely diced
2 tablespoons olive oil or butter
1 1/2 cups heavy cream or whole milk
1/4 cup grated Parmesan cheese
1 tablespoon all-purpose flour
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried Italian herbs
Fresh parsley, chopped for garnish
Instructions
1. Preheat oven to 375°F (190°C) and grease a 9×13-inch casserole dish.
2. In a skillet, heat olive oil and sauté onions and garlic until soft.
3. Add flour and stir for a minute, then slowly add cream while whisking until thick.
4. Stir in salt, pepper, herbs, and Parmesan until cheese is melted.
5. In the casserole dish, layer potatoes, zucchini, chicken, and bell peppers.
6. Pour one-third of the sauce over each layer; repeat until all ingredients are used.

8. Cover with foil and bake for 35 minutes.
