Ingredients

1 ½ cups cooked chicken breast, chopped

1 medium green apple, diced

1 cup red grapes, halved

½ cup chopped walnuts

3 cups romaine lettuce, chopped

⅓ cup mayonnaise or Greek yogurt

1 tablespoon lemon juice

Salt, to taste

Black pepper, to taste


Instructions

1. Chop the cooked chicken into bite-sized pieces.

2. Dice the apple, slice grapes in half, and chop the walnuts.

3. Rinse and chop romaine lettuce and pat dry.

4. In a small bowl, mix mayonnaise (or Greek yogurt) with lemon juice. Add salt and pepper to taste.

5. In a large mixing bowl, combine chicken, apples, grapes, walnuts, and lettuce.

6. Pour dressing over the top and toss gently to coat everything evenly.

7. Taste and adjust seasoning if needed.

8. Serve immediately or chill for 15–30 minutes before serving.


Notes

Toasting the walnuts adds extra depth of flavor and crunch—don’t skip this if you have the time.

If preparing ahead, keep the dressing and apples separate until just before serving.

For a lighter version, swap mayo with Greek yogurt or use a half-and-half blend.
