Ingredients

2 cups cooked chicken, shredded or cubed

1 box stuffing mix, prepared according to package instructions

1 can (10.5 oz) cream of chicken soup

1/3 cup milk

2 cups frozen mixed vegetables, thawed

1/4 cup butter (for the stuffing)

1/4 cup chopped onion (optional)

1/2 teaspoon poultry seasoning or dried herbs (optional)


Instructions

1. Prepare the stuffing according to package instructions and set aside.

2. Preheat the oven to 375°F (190°C).

3. In a large bowl, mix cooked chicken, cream of chicken soup, milk, vegetables, and any seasonings.

4. Grease a 9×13-inch baking dish and spread the chicken mixture evenly in the dish.

5. Gently spoon prepared stuffing over the top and lightly spread it without pressing down too hard.

6. Bake uncovered for 35–40 minutes until bubbly and the top is golden.

7. Let rest for 5 minutes before serving. Garnish with parsley if desired.


Notes

Let the casserole rest after baking to help it set—this makes serving easier.

If using leftover stuffing, moisten it with a little broth to keep it from drying out.

Want extra creaminess? Add shredded cheese between the filling and stuffing layers.
