Ingredients

2 cups cooked chicken breast, diced or shredded

0.5 cup mayonnaise

1 tablespoon Dijon mustard

1 celery stalk, finely chopped

0.5 cup red grapes, halved

0.25 cup red onion, finely diced

0.25 cup pecans, toasted and chopped

1 tablespoon fresh parsley, chopped

1 teaspoon lemon juice

Salt and black pepper, to taste

4 fresh croissants, sliced

Green leaf lettuce (optional, for layering)


Instructions

1. If using raw chicken, cook and cool completely, then dice or shred.

2. Toast the chopped pecans in a dry skillet over medium heat for 3–5 minutes until fragrant. Let cool.

3. In a bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper.

4. In a large mixing bowl, combine chicken, celery, red onion, grapes, parsley, and toasted pecans.

5. Add the dressing and gently fold the mixture until well combined.

6. Cover and refrigerate for at least 30 minutes.
