Ingredients
- 2 boneless skinless chicken thighs or breasts
- 1 tablespoon olive oil
- 1 garlic clove, minced
- ½ teaspoon paprika
- ½ teaspoon cumin
- Salt and pepper to taste
- 1 cup cooked jasmine rice
- 1 ripe avocado, sliced or diced
- ½ cup cherry tomatoes, halved
- 2 tablespoons fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions
- In a bowl, mix olive oil, garlic, paprika, cumin, salt, and pepper. Add chicken and marinate for 20–30 minutes.
- Cook rice according to package instructions and set aside.
- Heat a skillet or grill over medium-high heat. Cook marinated chicken for 5–7 minutes per side until cooked through. Let it rest, then slice.
- Dice avocado and tomatoes, and chop cilantro.
- Assemble the bowl: layer rice, then add chicken, avocado, and tomatoes. Sprinkle with cilantro.
- Squeeze lime juice over the top and serve.
