Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil (plus extra as needed)
  • 3 garlic cloves, minced
  • 1 (28-ounce) can whole peeled tomatoes
  • Salt and black pepper to taste
  • Pinch of red pepper flakes (optional)
  • 8 oz spaghetti (or pasta of choice)
  • Fresh basil leaves, torn
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Pat the chicken dry and season with salt, pepper, and red pepper flakes.
  2. Heat olive oil in a skillet over medium-high heat. Sear the chicken for 4–5 minutes per side, until golden and cooked through. Remove and let rest.
  3. In the same skillet, reduce heat to medium and sauté the garlic until fragrant (30 seconds to 1 minute).
  4. Add the canned tomatoes, crushing them by hand or with a spoon. Season with salt and simmer for 10–15 minutes.
  5. Meanwhile, cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
  6. Slice the chicken. Add pasta to the sauce and toss to coat, adding pasta water as needed.
  7. Serve pasta topped with chicken, Parmesan, and fresh basil. Drizzle with olive oil to finish.
