Ingredients

500g ground chicken

1 small onion, grated

3 garlic cloves, minced

3 tablespoons fresh parsley, finely chopped

1/3 cup breadcrumbs

1 egg

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil (for frying)

1 cup Greek yogurt

1 garlic clove, grated (for sauce)

1 tablespoon lemon juice

1 tablespoon olive oil (for sauce)

1 tablespoon fresh parsley (for garnish)


Instructions

1. In a large bowl, mix the ground chicken, grated onion, minced garlic, parsley, breadcrumbs, egg, and all spices until well combined but not overworked.

2. With damp hands, shape the mixture into oval koftas—about golf ball size—then flatten slightly.

3. Heat olive oil in a skillet over medium heat. Fry the koftas in batches, 3–4 minutes per side, until golden brown and cooked through.

4. In a bowl, mix Greek yogurt with grated garlic, lemon juice, olive oil, and a pinch of salt. Let it sit for 10 minutes to let flavors develop.

5. Spread the garlic yogurt on a serving plate, arrange warm koftas on top, and sprinkle with fresh parsley before serving.


Notes

Use ground chicken thighs instead of breast for extra moisture and flavor.

Grate the onion finely and drain excess liquid to prevent soggy koftas.

Let the garlic yogurt sit for at least 10 minutes before serving for the best flavor.
