Ingredients

2 cups cooked chicken, shredded or diced

2 cups broccoli florets, steamed

2 cups cooked white rice

1 ½ cups shredded sharp cheddar cheese, divided

2 cups whole milk

2 tablespoons butter

2 tablespoons all-purpose flour

½ medium onion, finely chopped

2 cloves garlic, minced

¾ teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika

Instructions

1. If not using rotisserie chicken, cook and shred chicken. Season with salt and pepper.

2. In a saucepan, melt butter and cook onion and garlic until soft. Stir in flour and cook 1-2 minutes.

3. Slowly whisk in milk. Cook until thickened. Add salt, pepper, and paprika.

4. Lightly steam the broccoli until just tender.

5. In a large bowl, mix chicken, broccoli, rice, half the cheese, and the sauce.

6. Transfer mixture into a greased 9×13-inch casserole dish.

7. Top with remaining cheese and bake at 375°F for 25-30 minutes.

8. Optional: Broil for 2 minutes for a golden, crispy top.

9. Let rest for 5 minutes before serving.

Notes

Use freshly shredded cheese for smoother melting and more flavor.

For a healthier twist, use brown rice or quinoa, but cook it first.

Add a teaspoon of Dijon mustard to the sauce for a little extra zing.
