Ingredients

  • 2 cups cooked chicken breast, diced or shredded
  • 3 cups broccoli florets (fresh or frozen, blanched if fresh)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1 1/2 cups shredded cheddar cheese (divided)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp olive oil or butter (for cooking chicken)
  • 1/2 cup crushed crackers or breadcrumbs (optional topping)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. If using fresh broccoli, blanch in boiling water for 2–3 minutes and drain.
  3. Season diced chicken with salt, pepper, and garlic powder. Cook in a skillet with olive oil until no longer pink.
  4. In a bowl, mix cream of chicken soup, sour cream, onion powder, and half the cheese.
  5. In a greased baking dish, layer chicken and broccoli. Pour sauce mixture on top and spread evenly.
  6. Sprinkle remaining cheese and optional breadcrumbs/crackers on top.
  7. Bake for 25–30 minutes or until the top is bubbly and golden.
  8. Let rest for 5 minutes before serving.
