Ingredients

1 1/2 cups cooked shredded chicken

6 slices cooked bacon, crumbled

8 oz cream cheese

1 packet ranch seasoning mix

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 can (10 oz) diced tomatoes with green chilies, drained

1/2 cup whole milk or half & half

1/4 cup chopped green onions

Instructions

1. Cook bacon in a skillet until crispy, then crumble and set aside. Reserve a bit of bacon fat for added flavor if desired.

2. In the same skillet, melt cream cheese over medium heat. Stir in milk to form a smooth base.

3. Add diced tomatoes with green chilies and ranch seasoning. Simmer gently for 2–3 minutes.

4. Stir in shredded chicken and heat through until fully warmed and coated in sauce.

5. Reduce heat and slowly add cheddar and Monterey Jack cheeses, stirring constantly until melted and smooth.

6. Mix in most of the crumbled bacon, reserving some for garnish.

7. Transfer to serving dish or skillet. Top with remaining bacon and green onions.

8. Serve warm with tortilla chips, pretzel bites, or veggies. Keep warm in a slow cooker if needed.

Notes

Always shred cheese fresh off the block for smoother melting.

To lighten it up, use Neufchâtel cheese and turkey bacon.

For extra flavor, reserve and use a tablespoon of bacon grease while cooking.
