Ingredients

4 boneless skinless chicken breasts

1 tablespoon olive oil

2 tablespoons unsalted butter

2 cups sliced cremini or button mushrooms

3 cloves garlic minced

1 teaspoon dried thyme

0.5 teaspoon paprika

Salt and black pepper to taste

1 tablespoon all-purpose flour

1 cup chicken broth

1 cup heavy cream

0.5 cup sour cream

0.75 cup grated parmesan cheese

1 cup shredded mozzarella cheese

Fresh parsley chopped

Optional: 0.5 cup spinach or kale

Optional: 0.25 cup cooked bacon bits


Instructions

1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside. Pat chicken dry and season with salt, pepper, and paprika.

2. In a large skillet over medium-high heat, add olive oil and 1 tablespoon of butter. Sear chicken for 3–4 minutes on each side until golden. Remove and set aside.

3. In the same pan, melt remaining butter. Add mushrooms and sauté for 5–6 minutes until golden. Stir in garlic and thyme; cook 30 seconds more.

4. Sprinkle flour over mushrooms and stir to coat. Slowly whisk in chicken broth. Add heavy cream and sour cream. Simmer 3–5 minutes until thickened.

5. Stir in parmesan cheese and season sauce with salt and pepper.

6. Place chicken into baking dish. Pour sauce over chicken and top with shredded mozzarella.

7. Bake uncovered for 25–30 minutes, until chicken reaches internal temp of 165°F and cheese is bubbly and golden.

8. Let rest 5–10 minutes. Garnish with chopped parsley and serve.


Notes

Use freshly grated cheese for better melting and flavor.

Add a splash of broth or milk if the sauce thickens too much before baking.

Let the dish rest after baking so the sauce can settle and thicken.
