Ingredients

2 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

3/4 cup unsalted butter softened

1/2 cup granulated sugar

1/2 cup brown sugar

2 large eggs

1 teaspoon vanilla extract

1/2 teaspoon almond extract

2 tablespoons cocoa powder

1/3 cup finely ground pistachios or 1 teaspoon pistachio flavoring

1/2 cup chopped candied or dried cherries

green and pink food coloring optional

1/4 cup granulated sugar for rolling


Instructions

1. In a bowl, whisk together flour, baking soda, and salt until evenly combined.

2. In a separate bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.

3. Add eggs one at a time, then mix in vanilla and almond extract.

4. Gradually add dry ingredients into the wet mixture and mix until just combined.

5. Divide the dough evenly into three separate bowls.

6. Mix cocoa powder into one portion for chocolate dough.

7. Add pistachio flavoring or ground pistachios to the second portion and optional green coloring.

8. Fold chopped cherries into the third portion with optional pink coloring.

9. Chill all dough portions for 30–60 minutes.

10. Take small portions from each dough and combine into one ball without overmixing.

11. Roll each dough ball in granulated sugar.

12. Place on a lined baking sheet and bake at 350°F (175°C) for 10–12 minutes.

13. Let cookies cool on the baking sheet for 5 minutes, then transfer to a rack to cool completely.


Notes

Do not skip chilling the dough, as it helps maintain the cookie shape and texture.

Avoid overmixing the dough portions to keep the marbled appearance.

Slightly underbake the cookies to achieve a perfectly soft and chewy center.
