Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

0.5 teaspoon almond extract

0.5 teaspoon vanilla extract

2.25 cups all-purpose flour

0.5 teaspoon baking soda

0.5 teaspoon cream of tartar

0.25 teaspoon salt

0.33 cup granulated sugar or sanding sugar, for sprinkling

24 maraschino cherries, well-drained and patted dry

0.33 cup sliced almonds


Instructions

1. Cream the softened butter and sugar in a large bowl with a mixer for 2–3 minutes until light and fluffy.

2. Add the egg, almond extract, and vanilla extract, mixing until fully incorporated.

3. In a separate bowl, whisk together flour, baking soda, cream of tartar, and salt.

4. Gradually add the dry ingredients to the wet mixture, mixing just until combined — do not overmix.

5. Scoop dough into 1.5-tablespoon-sized balls. Roll between hands and place on a parchment-lined baking sheet.

6. Gently flatten each ball, sprinkle with sugar, press a cherry in the center, and top with sliced almonds.

7. Bake at 350°F (175°C) for 10–12 minutes, until edges are just set and lightly golden.

8. Let cookies cool on the baking sheet for 3–5 minutes, then transfer to a wire rack to cool completely.
