Ingredients

2 boneless skinless chicken breasts

10 ounces rotini pasta

1 cup freshly grated parmesan cheese

1 cup heavy cream

4 garlic cloves minced

2 tablespoons butter

1 tablespoon olive oil

2 tablespoons fresh parsley chopped

1 teaspoon crushed red pepper flakes optional

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon Italian seasoning


Instructions

1. Season chicken breasts with salt, pepper, Italian seasoning, and red pepper flakes if using.

2. Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat.

3. Sear chicken 5–6 minutes per side until golden and fully cooked. Set aside to rest.

4. Meanwhile, bring a large pot of salted water to boil.

5. Cook rotini pasta according to package directions until al dente. Drain and reserve 1 cup pasta water.

6. In the same skillet, reduce heat and add remaining butter.

7. Sauté minced garlic for 30 seconds until fragrant.

8. Pour in heavy cream, stir, and simmer for 3–4 minutes.

9. Gradually stir in parmesan until melted and smooth.

10. Add parsley and adjust sauce thickness with reserved pasta water if needed.

11. Toss cooked pasta into the sauce and stir to coat.

12. Slice the rested chicken and serve over the pasta. Garnish with more parsley and cheese if desired.


Notes

For best results, use freshly grated parmesan — pre-shredded cheese may clump.

Let the chicken rest before slicing to keep it juicy and tender.

Add a splash of reserved pasta water to the sauce if it gets too thick.
