Ingredients

2 boneless skinless chicken thighs or breasts

1 tablespoon Cajun seasoning

1 tablespoon olive oil or butter

3 cloves garlic minced

1 cup heavy cream

¾ cup freshly grated parmesan cheese

8 ounces penne pasta

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon chopped fresh parsley optional

½ cup reserved pasta water as needed


Instructions

1. Pat chicken dry and season both sides with Cajun seasoning. Let rest at room temperature for 10–15 minutes.

2. Boil salted water and cook penne pasta until al dente. Drain and reserve ½ cup pasta water.

3. Heat oil or butter in a skillet over medium-high. Sear chicken 5–7 minutes per side until golden and cooked through. Remove and let rest.

4. In the same skillet, reduce heat to medium. Add garlic and sauté for 30 seconds. Pour in heavy cream to deglaze the pan. Simmer 2–3 minutes.

5. Stir in parmesan cheese until fully melted and sauce is smooth. Add a splash of pasta water if needed.

6. Toss cooked penne into the sauce. Let simmer together 1–2 minutes.

7. Slice rested chicken and serve over pasta. Garnish with parsley if desired.


Notes
