Ingredients

2 tablespoons olive oil

2 boneless skinless chicken breasts (sliced thin)

Salt and pepper to taste

3 cloves garlic minced

1 teaspoon Italian seasoning

1/2 teaspoon crushed red pepper flakes (optional)

4 cups low-sodium chicken broth

1 cup heavy cream

12 oz fettuccine pasta (uncooked)

1 1/2 cups freshly grated Parmesan cheese

1 tablespoon butter (optional)

1/4 cup chopped fresh parsley (for garnish)

Extra Parmesan for topping

Instructions

1. Season chicken breast slices with salt and pepper. Heat olive oil in a large skillet or Dutch oven over medium-high. Sear chicken for 3–4 minutes per side until golden and cooked through. Set aside.

2. In the same pot, lower heat and sauté garlic for 30 seconds. Add Italian seasoning and optional red pepper flakes. Stir constantly.

3. Pour in chicken broth and cream, scraping up brown bits to deglaze. Bring to a simmer.

4. Add fettuccine and cook uncovered, stirring occasionally, until pasta is al dente and sauce has reduced, about 10–12 minutes.

5. Stir in Parmesan until smooth and velvety. Adjust consistency with extra broth or cream if needed.

6. Return chicken to the pot and toss with pasta. Let it heat through for 2–3 minutes.

7. Garnish with fresh parsley and extra Parmesan. Serve hot and enjoy!

Notes

Use freshly grated Parmesan to avoid clumps in the sauce and get the creamiest texture.

Don’t overcook the pasta—it will keep softening in the hot sauce.

A splash of cream or pasta water can loosen up the sauce when reheating leftovers.
