Ingredients

  • 1 lb ground beef
  • 2 cups cooked long grain white rice
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (10 oz) can diced tomatoes with green chilies (Rotel)
  • 1 packet taco seasoning
  • 1 small onion, diced
  • 2 cups shredded cheddar cheese
  • 1 tbsp olive oil
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened.
  3. Add ground beef to the skillet and cook until browned. Drain excess fat.
  4. Stir in taco seasoning and cook for 1 more minute.
  5. Mix in diced tomatoes with green chilies, black beans, and cooked rice. Combine thoroughly.
  6. Transfer mixture to a greased 9×13-inch baking dish.
  7. Sprinkle shredded cheddar cheese evenly on top.
  8. Bake uncovered for 15-20 minutes, or until cheese is melted and bubbly.
