Cheesy Loaded Meatloaf Casserole is a hearty, comfort-filled twist on a classic favorite. Made with seasoned ground beef, fresh vegetables, breadcrumbs, and melty cheddar cheese, it’s baked to savory perfection and ideal for any meal where flavor and satisfaction are top priorities.


Ingredients

  • 2 pounds ground beef (80/20)
  • 1 cup finely chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell pepper
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1/4 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 1/2 cups shredded sharp cheddar cheese (divided)
  • 1/4 cup chopped fresh parsley (for garnish)
  • Optional: 1/2 cup ketchup or barbecue sauce

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish.
  2. Chop vegetables and mince garlic. Shred cheese and set aside 1/2 cup for topping.
  3. In a large bowl, combine ground beef, chopped vegetables, garlic, breadcrumbs, eggs, milk, Worcestershire sauce, seasonings, and 1 cup shredded cheese.
  4. Mix until just combined. Do not overmix.
  5. Press mixture evenly into the casserole dish. Spread optional ketchup or BBQ sauce on top.
  6. Bake for 40–45 minutes, or until internal temperature reaches 160°F (71°C).
  7. Remove from oven, sprinkle remaining cheese on top, and return to bake for 5–7 more minutes.
  8. Let rest for 10 minutes before slicing. Garnish with parsley and serve.
