Ingredients
1.5 lbs ground beef
5 cups potatoes, peeled and diced into 1/2-inch cubes
1 medium onion, finely chopped
1 green bell pepper, diced
1 red bell pepper, diced
2 cloves garlic, minced
2 cups shredded sharp cheddar cheese, divided
1 can (10.5 oz) cream of mushroom soup
0.5 cup whole milk
1 teaspoon salt
0.5 teaspoon black pepper
0.5 teaspoon smoked paprika
0.5 teaspoon dried thyme or Italian seasoning
1 tablespoon olive oil
Cooking spray or butter, for greasing
Instructions
1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
2. In a large skillet, brown the ground beef over medium-high heat, breaking it up as it cooks. Drain excess fat.
3. Add olive oil to the skillet and sauté the onion, bell peppers, and garlic for 4–5 minutes. Stir in salt, pepper, paprika, and thyme. Combine with beef.
4. In a large mixing bowl, mix diced potatoes, beef mixture, cream of mushroom soup, milk, and 1.5 cups shredded cheddar cheese.
5. Transfer mixture into the baking dish and spread evenly. Cover tightly with foil.
6. Bake for 45 minutes until potatoes are fork-tender.
7. Uncover and top with remaining 0.5 cup cheddar cheese. Bake an additional 10–15 minutes until cheese is golden and bubbly.
