Ingredients
1 pound rotini or fusilli pasta
1 pound ground beef
2 cups Alfredo sauce
8 ounces Velveeta cheese, cubed
3 cloves garlic, minced
1 tablespoon Cajun seasoning
1 tablespoon butter or olive oil
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley, chopped (or 1 tablespoon dried)
Instructions
1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.
2. In a large skillet, heat butter or olive oil over medium-high. Add ground beef and cook until browned, breaking it up with a spoon.
3. Season the beef with Cajun seasoning, salt, and pepper. Stir well to evenly coat.
4. Add minced garlic and sauté for about 1 minute, until fragrant.
5. Reduce heat to medium. Pour in the Alfredo sauce and add cubed Velveeta cheese. Stir constantly until the cheese is fully melted and the sauce is smooth.
6. Add the cooked pasta to the skillet. Toss everything together until the pasta is fully coated. If the sauce is too thick, add a splash of reserved pasta water.
7. Let the pasta simmer for 2–3 minutes to allow the flavors to combine.
8. Garnish with parsley and serve hot. Add extra Parmesan or red pepper flakes if desired.
Notes
For a smoother sauce, add the Velveeta gradually and stir continuously over medium heat.
If using homemade Alfredo sauce, be sure it’s well-seasoned to complement the Cajun beef.
