Ingredients
1 lb sirloin steak, cut into bite-sized cubes
2 tablespoons olive oil
2 tablespoons unsalted butter
4 cloves garlic, minced
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon smoked paprika
¼ teaspoon red pepper flakes (optional)
2 tablespoons chopped fresh parsley
2 tablespoons grated Parmesan cheese
8 oz linguine pasta
2 tablespoons unsalted butter
2 cloves garlic, minced
1 cup heavy cream
¾ cup grated Parmesan cheese
Salt and black pepper to taste
¼ teaspoon nutmeg (optional)
Fresh chopped parsley for garnish
2–4 tablespoons reserved pasta water
Instructions
1. Bring a large pot of salted water to a boil. Add linguine and cook until al dente. Reserve ½ cup pasta water, then drain and set aside.
2. Pat steak cubes dry and season with salt, pepper, and smoked paprika.
3. Heat olive oil in a skillet over medium-high heat. Sear steak cubes 2–3 minutes per side until browned. Remove from skillet.
4. In the same skillet, reduce heat to medium. Add butter, then stir in minced garlic and red pepper flakes. Cook until fragrant.
5. Return steak bites to the pan and toss with garlic butter. Add parsley and Parmesan, then turn off heat. Cover to keep warm.
6. In another pan, melt butter and sauté garlic. Add heavy cream and simmer. Stir in Parmesan, nutmeg (optional), salt, and pepper.
7. Add drained linguine to the cream sauce and toss. Use reserved pasta water to loosen the sauce if needed.
8. Serve creamy linguine on plates, top with cheesy garlic steak bites, and garnish with parsley and extra Parmesan.
Notes
Always dry your steak cubes thoroughly before searing to ensure a golden crust.
Use freshly grated Parmesan for a smoother, creamier sauce.
Don’t skip the pasta water—it helps the sauce cling beautifully to the linguine.
