Ingredients

  • 4 ears fresh corn on the cob
  • 4 tablespoons unsalted butter
  • 3 garlic cloves, minced or roasted
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil (optional, for roasting/grilling)

Instructions

  1. Husk and clean the corn. Pat dry.
  2. Melt butter in a saucepan over low heat. Add minced garlic and cook for 2–3 minutes until fragrant.
  3. Preheat your grill or oven to 400°F (200°C).
  4. Brush corn with olive oil or garlic butter and roast/grill for 15–20 minutes, turning occasionally.
