Ingredients

  • 34 large sweet onions (Vidalia preferred), sliced into 1/2-inch thick rings
  • 2 tbsp unsalted butter, melted
  • 1 tbsp olive oil
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tsp fresh thyme leaves (optional)
  • 1/4 cup grated Parmesan cheese (optional)
  • 23 tbsp heavy cream (optional)
  • Breadcrumbs (optional, for topping)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Peel onions and slice into thick 1/2-inch rings. Carefully separate the rings.
  3. In a cast iron skillet or oven-safe baking dish, pour melted butter and olive oil to coat the base.
  4. Arrange the onion rings upright in a spiral or snug rows. Season with garlic powder, salt, and pepper.
  5. Sprinkle mozzarella and cheddar between and over the rings. Add cream if using. Top with Parmesan and breadcrumbs if desired.
  6. Bake uncovered for 25–30 minutes until onions are tender and cheese is golden.
  7. For extra crispiness, broil for 2–3 minutes at the end.
  8. Let rest 5 minutes, garnish with thyme, and serve warm.
