Ingredients
- 3–4 large sweet onions (Vidalia preferred), sliced into 1/2-inch thick rings
- 2 tbsp unsalted butter, melted
- 1 tbsp olive oil
- 1 cup shredded mozzarella cheese
- 1 cup shredded sharp cheddar cheese
- 1/2 tsp garlic powder
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 tsp fresh thyme leaves (optional)
- 1/4 cup grated Parmesan cheese (optional)
- 2–3 tbsp heavy cream (optional)
- Breadcrumbs (optional, for topping)
Instructions
- Preheat oven to 375°F (190°C).
- Peel onions and slice into thick 1/2-inch rings. Carefully separate the rings.
- In a cast iron skillet or oven-safe baking dish, pour melted butter and olive oil to coat the base.
- Arrange the onion rings upright in a spiral or snug rows. Season with garlic powder, salt, and pepper.
- Sprinkle mozzarella and cheddar between and over the rings. Add cream if using. Top with Parmesan and breadcrumbs if desired.
- Bake uncovered for 25–30 minutes until onions are tender and cheese is golden.
- For extra crispiness, broil for 2–3 minutes at the end.
- Let rest 5 minutes, garnish with thyme, and serve warm.
