225g rigatoni pasta

450g ground beef

1 medium yellow onion, diced

2 cloves garlic, minced

2 tablespoons tomato paste

1 cup beef broth

1 cup heavy cream

2 cups shredded cheddar cheese, divided

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Bring a large pot of salted water to a boil. Add the rigatoni and cook until al dente according to package instructions. Drain and set aside.

2. In a large skillet over medium-high heat, cook the ground beef until browned and fully cooked. Drain excess grease.

3. Add diced onion to the skillet and sauté for 3–4 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.

4. Stir in the tomato paste and cook for 1–2 minutes to enhance the flavor. Season with salt and pepper.
