Ingredients
1.5 pounds ground beef (80/20)
1 cup breadcrumbs
2 large eggs
1 cup shredded cheddar cheese
0.5 cup finely diced onion
2 cloves garlic, minced
0.25 cup ketchup
1 tablespoon Worcestershire sauce
1 teaspoon salt
0.5 teaspoon black pepper
4 slices cooked bacon, chopped
4 slices American cheese or extra cheddar for topping
Instructions
1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or grease a loaf pan.
2. In a large bowl, mix together the ground beef, breadcrumbs, eggs, cheddar cheese, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper until just combined.
3. Transfer the mixture to the baking sheet and shape it into a loaf, or press it into a prepared loaf pan.
4. Bake uncovered for 40–45 minutes until the edges are slightly crisp and the internal temperature reaches 155°F (68°C).
5. Remove from the oven, add slices of American cheese and sprinkle the chopped bacon over the top.
6. Return to the oven for another 10–15 minutes, or until the cheese is melted and bubbly and the internal temp reaches 160°F (71°C).
7. Let the meatloaf rest for 5–10 minutes before slicing and serving.
Notes
Use 80/20 beef for the best balance of flavor and moisture—leaner cuts can dry out easily.
For extra cheesy goodness, press a layer of shredded cheese in the center of the loaf before shaping.
Letting the meatloaf rest before slicing helps the juices settle and gives cleaner slices.
