Ingredients
2 lbs Yukon Gold potatoes
2 cups sharp cheddar cheese, shredded

3 tbsp all-purpose flour
4 cups vegetable or chicken broth
1 cup milk
1/2 cup heavy cream
1 tsp fresh thyme
2 tbsp fresh parsley, chopped
1 tsp salt (adjust to taste)

Instructions
1. In a large pot, melt butter over medium heat. Add chopped onions and sauté for about 5 minutes until translucent.
2. Stir in minced garlic and cook for another minute until fragrant.
