Ingredients
1 can sweetened condensed milk
1 can coconut milk (full-fat)
1 cup whole milk
3 large eggs
0.5 cup sugar
0.5 cup all-purpose flour
2 tablespoons melted butter
0.5 cup shredded coconut (plus extra for garnish)
1 teaspoon vanilla extract (optional)
Instructions
1. Preheat the oven to 350°F (175°C). Grease a bundt or round cake pan with butter or non-stick spray.
2. In a blender, combine sweetened condensed milk, coconut milk, whole milk, eggs, sugar, flour, melted butter, and vanilla extract. Blend for 1–2 minutes until smooth.
3. Pour the batter into the prepared pan and let it rest a few minutes to release air bubbles.
4. Place the cake pan inside a larger baking dish and fill the outer dish with hot water halfway up the cake pan (bain-marie method).
5. Bake for 50–60 minutes, or until the top is golden and a toothpick comes out mostly clean.
6. Remove from the oven and water bath. Cool for 30 minutes in the pan.
7. Refrigerate for 2–4 hours until fully set and chilled.
