Ingredients
12 oz farfalle pasta
1 pint cherry tomatoes, halved
8 oz fresh mozzarella balls (ciliegine or bocconcini)
1 cup fresh basil leaves, torn
2 tablespoons extra virgin olive oil
2 tablespoons balsamic glaze
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
2 tablespoons fresh parsley, chopped (optional)
Instructions
1. Bring a large pot of salted water to a boil. Cook farfalle pasta until al dente, according to package instructions. Drain and rinse under cold water to cool.
2. While the pasta cooks, halve the cherry tomatoes, drain the mozzarella balls, and tear or chop the basil leaves. Chop parsley if using.
3. In a large bowl, combine the cooled pasta, tomatoes, mozzarella, basil, and parsley.
4. Drizzle olive oil over the mixture, season with salt and pepper, and toss gently to combine.
5. Just before serving, drizzle balsamic glaze over the salad and give it a final gentle toss.
6. Taste and adjust seasoning if needed.
7. Serve immediately or chill for 30 minutes for a colder salad. Garnish with fresh basil leaves if desired.
Notes
For the best flavor, use ripe cherry tomatoes and the freshest basil you can find.
Add the balsamic glaze just before serving so it doesn’t get lost at the bottom of the bowl.
If making ahead, wait to add the basil until serving time to keep it from browning.
