Ingredients
2 boneless, skinless chicken breasts
2 tablespoons Cajun seasoning
12 ounces cavatappi pasta
2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups whole milk
½ cup heavy cream
1 ½ cups sharp cheddar cheese, shredded
1 cup mozzarella cheese, shredded
½ teaspoon paprika
Salt and pepper to taste
2 tablespoons chopped parsley or chives (for garnish)
Instructions
1. Bring a large pot of salted water to a boil and cook the cavatappi until just al dente. Drain and set aside, reserving a little pasta water if needed.
2. Cut the chicken into bite-sized pieces and toss with Cajun seasoning, salt, and pepper. Sear in a hot skillet with a bit of oil until golden and cooked through. Set aside.
3. In a large saucepan, melt butter over medium heat. Whisk in the flour and cook for 1–2 minutes to make a roux.
4. Slowly whisk in the milk and cream, and cook until the sauce thickens (about 5 minutes).
5. Lower the heat and stir in the cheddar and mozzarella cheeses until melted and smooth. Add paprika, salt, and pepper.
6. Fold in the cooked pasta and Cajun chicken, stirring until everything is evenly coated.
7. Optional: Transfer to a baking dish, top with more cheese, and bake at 375°F (190°C) for 15–20 minutes until bubbly.
8. Garnish with chopped parsley or chives and serve immediately.
Notes
For maximum creaminess, always use freshly grated cheese — pre-shredded has additives that can affect the sauce.
Adjust the Cajun seasoning to control spice level — not all blends are the same.
For best texture, avoid overbaking the mac and cheese as it can dry out.
