Ingredients

1 can (10 oz) Rotel tomatoes with green chilies, drained

1 cup sour cream

1 cup shredded cheddar cheese

0.5 cup finely diced red bell pepper

0.5 cup finely diced green bell pepper

0.25 cup finely chopped red onion

1 packet (1 oz) ranch seasoning mix

2 tablespoons chopped fresh cilantro or parsley (optional)

0.5 teaspoon garlic powder

0.25 teaspoon black pepper

0.5 teaspoon chili flakes or hot sauce (optional)

Instructions

1. Drain the Rotel tomatoes thoroughly using a fine mesh strainer. Press lightly to remove excess moisture.

2. Dice red and green bell peppers and red onion finely. Chop herbs if using.

3. In a large mixing bowl, combine sour cream and ranch seasoning until smooth.

4. Stir in the drained Rotel, chopped peppers, red onion, garlic powder, black pepper, and optional chili flakes.

5. Fold in the shredded cheddar cheese and fresh herbs until evenly mixed.

6. Cover and chill for at least 1 hour to allow flavors to meld.

7. Before serving, give it a quick stir and pair with your favorite chips or veggies.

8. Store any leftovers in an airtight container in the fridge for up to 4 days.

Notes

Let the dip chill for at least an hour—overnight is even better.

Always drain Rotel thoroughly to avoid watery texture.

For maximum flavor, shred cheese fresh instead of using pre-shredded.
