Ingredients
1 lb ground beef
8 small flour tortillas
8 slices American cheese
1 cup shredded iceberg lettuce
0.5 cup dill pickles, chopped or sliced
1 tbsp oil or butter
Salt and pepper to taste
0.5 cup mayonnaise
1 tbsp yellow mustard
1 tbsp ketchup
1 tbsp finely diced pickles or relish
1 tsp white vinegar
0.5 tsp garlic powder
0.5 tsp onion powder
0.25 tsp smoked paprika
Chopped onions
Sliced jalapeños
Sesame seeds
Instructions
1. In a small bowl, mix all special sauce ingredients and refrigerate to let flavors meld.
2. Shred iceberg lettuce, chop pickles and any optional toppings. Set aside.
3. Divide ground beef into 8 equal 2-ounce balls. Keep them chilled until cooking.
4. Preheat a cast iron skillet or griddle over medium-high heat. Lightly oil the surface.
5. Place one tortilla on the skillet and smash a beef ball directly onto it using a burger press or spatula. Press firmly.
6. Season beef with salt and pepper. Let cook for 2–3 minutes without moving it.
7. Flip the entire tortilla and beef patty, then cook for 1–2 minutes until tortilla is golden.
8. Flip again, add cheese to the beef, and let melt for 30 seconds.
9. Remove from pan, top with lettuce, pickles, optional toppings, and drizzle with sauce.
10. Fold and serve hot. Repeat for remaining tacos.
Notes
