Ingredients

  • 2 lbs ground beef (80/20 preferred)
  • 2 large eggs
  • 1 cup breadcrumbs (or crushed tortilla chips)
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1 cup salsa (½ cup in meatloaf, ½ cup on top)
  • 1 ½ cups shredded cheddar cheese (divided)
  • ½ red onion, diced
  • 2 tbsp chopped fresh cilantro
  • Jalapeño slices for topping (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×5-inch loaf pan or line with parchment paper.
  2. In a large bowl, combine ground beef, eggs, breadcrumbs, taco seasoning, ½ cup salsa, 1 cup cheddar, diced red onion, cilantro, and a pinch of salt and pepper.
  3. Gently mix the ingredients until just combined. Do not overmix.
  4. Press the meat mixture into the loaf pan and smooth the top.
  5. Spread the remaining ½ cup of salsa over the top, then sprinkle the remaining ½ cup of cheddar cheese.
  6. Add jalapeño slices on top, if using.
  7. Bake for 50–60 minutes, or until internal temperature reaches 160°F (71°C).
  8. Let the loaf rest for 10 minutes before slicing and serving.
