1 lb chicken breasts, boneless and skinless

1/2 cup all-purpose flour

2 tablespoons olive oil

2 tablespoons butter, divided

2 cloves garlic, minced

3/4 cup chicken broth

1/4 cup freshly squeezed lemon juice

2 tablespoons capers, drained

2 tablespoons fresh parsley, chopped

4 slices lemon (optional, for garnish)


Instructions

1. Slice each chicken breast in half horizontally to make thin cutlets, then gently pound to 1/2 inch thickness. Season both sides with salt and pepper.

2. Dredge the chicken pieces lightly in flour, shaking off any excess.

3. In a large skillet, heat olive oil over medium-high heat. Sear the chicken for 3-4 minutes per side until golden brown and fully cooked. Transfer to a plate.

4. Lower the heat to medium. Add 1 tablespoon butter and garlic to the skillet. Cook for 30 seconds until fragrant.
