Ingredients

12 oz bowtie pasta (farfalle)

1 lb beef sirloin or stew meat, cut into bite-sized cubes

2 tbsp olive oil

3 tbsp unsalted butter

3 cloves garlic, minced

1 ½ cups heavy cream

1 cup freshly grated Parmesan cheese

½ cup whole milk (optional)

1 tsp Italian seasoning

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped, for garnish


Instructions

1. Bring a large pot of salted water to a boil. Add bowtie pasta and cook until al dente. Reserve 1 cup pasta water, drain, and set aside.

2. Heat olive oil in a skillet over medium-high heat. Add beef, season, and sear for 2–3 minutes per side. Remove from skillet.

3. In the same skillet, melt butter over medium heat. Add garlic and cook 1 minute. Stir in heavy cream, reduce heat, and whisk in Parmesan until smooth.

4. Add pasta and beef to the sauce, tossing to coat. Adjust with pasta water if needed.

5. Sprinkle with Italian seasoning and parsley before serving.


Notes

Use freshly grated Parmesan for a smoother, richer sauce.

For a deeper flavor, sear beef in both butter and olive oil.

To lighten, replace half the cream with milk and heat gently to avoid curdling.
