Ingredients
1/4 cup soy sauce
1/4 cup mirin
2 tablespoons brown sugar
1 tablespoon honey
2 tablespoons rice vinegar
2 teaspoons sesame oil
2 garlic cloves, minced
1 teaspoon freshly grated ginger
1 tablespoon cornstarch mixed with 2 tablespoons water
4 boneless skinless chicken thighs
2 tablespoons green onions, chopped
1 teaspoon sesame seeds (optional)

Instructions
1. Preheat your oven to 400°F (200°C). Grease or line a baking dish.
2. In a small saucepan, combine soy sauce, mirin, brown sugar, honey, rice vinegar, sesame oil, garlic, and ginger.
3. Bring to a simmer, then stir in the cornstarch-water mixture. Whisk until thickened. Remove from heat.
