A delicious twist on the classic grilled cheese, this version brings together creamy avocado, fresh mozzarella, and juicy tomatoes between golden, crispy slices of bread. Quick to prepare and packed with flavor, it’s the perfect comfort food with a gourmet flair.
Ingredients
- 2 slices of hearty white or sourdough bread
- 1 ripe avocado, sliced or mashed
- 2–3 slices of fresh mozzarella
- 2 slices of ripe tomato
- 1–2 tablespoons of butter or mayonnaise
- Salt and black pepper, to taste
- Optional: Fresh basil leaves, red pepper flakes
Instructions
- Slice the tomato and mozzarella, and prep the avocado. Pat tomato slices dry.
- Spread butter or mayo on one side of each bread slice.
- On the dry side, layer avocado, tomato, salt, pepper, mozzarella, and optional add-ins.
- Preheat a skillet over medium heat.
- Place the sandwich in the skillet, buttered sides out.
- Cook for 3–4 minutes on one side until golden, then flip and cook the other side for 2–3 minutes.
- Let rest for a minute before slicing and serving.
