Ingredients

2 cups cooked shredded chicken

2 cups cooked shredded pork

1 tablespoon olive oil

1 large onion finely chopped

1 green bell pepper diced

1 red bell pepper diced

2 celery stalks finely chopped

2 medium potatoes peeled and diced

1 cup lima beans

1 1/2 cups corn kernels

1 can (14.5 oz) diced tomatoes

3 cups chicken broth

1 cup tomato sauce

2 tablespoons ketchup

1 tablespoon Worcestershire sauce

1 teaspoon smoked paprika

1 teaspoon dried thyme

1/2 teaspoon cayenne pepper

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon brown sugar

1 tablespoon apple cider vinegar

1 bay leaf


Instructions

1. Heat olive oil in a large Dutch oven over medium heat and sauté onion, celery, and bell peppers until softened.

2. Stir in smoked paprika, thyme, cayenne, salt, and black pepper and cook briefly to bloom spices.

3. Add diced tomatoes, tomato sauce, ketchup, Worcestershire sauce, chicken broth, and bay leaf. Bring to a gentle simmer.

4. Add potatoes and lima beans and simmer until potatoes are tender.

5. Stir in shredded chicken, shredded pork, and corn and cook uncovered until thick and hearty.

6. Remove bay leaf, stir in brown sugar and apple cider vinegar, and adjust seasoning.

7. Let stew rest briefly before serving.


Notes

For deeper smoky flavor, use smoked meats or add a small dash of liquid smoke.

Mash a few potatoes into the broth if you prefer a thicker consistency.
