Ingredients
12 lasagna noodles, cooked
1 lb ground beef
4 cloves garlic, minced
1 tbsp ginger, grated
1 cup carrots, julienned
2 cups bok choy, chopped
4 green onions, chopped (plus more for garnish)
1/3 cup soy sauce
1 tbsp sesame oil
2 tsp cornstarch
1 tbsp brown sugar
1 tbsp rice vinegar
1 tbsp sesame seeds
Instructions
1. Boil lasagna noodles according to package directions until just al dente. Drain and rinse with cool water.
2. In a saucepan, mix soy sauce, brown sugar, ginger, garlic, sesame oil, rice vinegar, and cornstarch slurry. Simmer until thickened into a glaze.
3. In a skillet, heat sesame oil. Add garlic, ginger, and green onions. Cook until fragrant.
4. Add ground beef to the skillet and cook until browned. Stir in carrots and bok choy, cooking until just tender. Add a few tablespoons of the glaze. Remove from heat.
5. Preheat oven to 375°F (190°C). In a baking dish, spread a thin layer of glaze. Layer noodles, meat filling, and glaze. Repeat.
6. Finish with noodles on top, drizzle remaining glaze, and sprinkle with sesame seeds and green onions.
7. Cover with foil and bake 25 minutes. Remove foil and bake 10 minutes more until bubbling.
