Ingredients

1 loaf day-old brioche or challah bread, cut into 1-inch cubes

4 large eggs

2 cups whole milk

1/2 cup heavy cream

1/2 cup granulated sugar

1/4 cup light brown sugar

2 teaspoons vanilla extract

1 1/2 teaspoons ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

2 tablespoons unsalted butter

2 medium apples, peeled, cored, and diced

Optional: maple syrup, powdered sugar, whipped cream, chopped nuts

Instructions

1. Cut bread into 1-inch cubes and let sit out for a few hours or overnight to dry slightly.

2. Peel and dice apples into bite-sized chunks and set aside.

3. In a large bowl, whisk together eggs, milk, cream, sugars, vanilla, cinnamon, nutmeg, and salt until smooth.

4. Grease a 9×13-inch baking dish with butter.

5. Layer half of the bread, then half of the apples, and pour half the custard mixture on top.

6. Repeat with remaining bread, apples, and custard. Press gently to help soak.

7. Cover and refrigerate for at least 4 hours or overnight if making ahead.

8. Preheat oven to 350°F and let casserole sit at room temp for 20 minutes before baking.

9. Dot the top with butter. Bake uncovered for 45–55 minutes until golden and set.

10. Let cool for 10 minutes and serve warm with your favorite toppings.

Notes

Use day-old bread for best absorption and texture.

Let the casserole rest at room temperature before baking to ensure even cooking.

You can mix in dried fruit or nuts for added flavor and texture variety.
