Ingredients

1 pound sirloin steak, cut into 1-inch cubes

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon crushed red pepper flakes (optional)

3 medium Yukon gold potatoes, peeled and cut into ¾-inch cubes

1 tablespoon olive oil

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon dried rosemary or Italian seasoning (optional)

3 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh parsley, chopped

½ teaspoon lemon juice (optional)

Instructions

1. Peel and dice the potatoes into ¾-inch cubes. Soak them in cold water for 10–15 minutes, then pat dry.

2. Cut steak into 1-inch cubes and pat dry.

3. In a bowl, toss the steak with olive oil, garlic powder, onion powder, smoked paprika, salt, pepper, and crushed red pepper.

4. In another bowl, toss the dried potatoes with olive oil, salt, pepper, and optional rosemary or seasoning.

5. Preheat air fryer to 400°F (200°C) for 3–5 minutes.

6. Add potatoes to air fryer basket in a single layer. Cook for 10–12 minutes, shaking halfway.

7. Add steak bites to the basket and cook for another 6–8 minutes, shaking or flipping once.

8. While everything cooks, melt butter in a small saucepan over low heat. Add minced garlic and cook for 1–2 minutes until fragrant.

9. Stir in parsley and lemon juice (if using), then remove from heat.

10. Toss cooked steak and potatoes in garlic butter. Garnish with extra parsley or Parmesan if desired. Serve hot.

Notes

Soak potatoes before cooking to achieve a crispier texture.

Let steak rest for a couple of minutes after air frying to retain juices.

Don’t overcrowd the air fryer—cook in batches if necessary for best results.
