Ingredients
4 medium Russet potatoes
2 tablespoons olive oil
1 tablespoon kosher salt
4 tablespoons butter
4 tablespoons sour cream
1 cup shredded cheddar cheese
4 tablespoons cooked bacon crumbles
2 tablespoons chopped green onions
Instructions
1. Scrub and dry the Russet potatoes thoroughly.
2. Rub each potato with olive oil and sprinkle with kosher salt.
3. Place the potatoes in the air fryer basket, leaving space between each one.
4. Air fry at 400°F (200°C) for 35–45 minutes, flipping halfway through.
5. Check doneness by piercing with a fork—it should slide in easily.
6. Slice open the baked potatoes and fluff the insides with a fork.
7. Top with butter, sour cream, shredded cheese, bacon crumbles, and green onions.
8. Serve hot with your favorite toppings.
Notes
Store leftovers in the fridge for up to 4 days. Reheat in the air fryer for 5–8 minutes at 375°F to restore crispiness.
To freeze, wrap cooled potatoes in foil and freeze for up to 2 months. Reheat from frozen in the air fryer for 15–20 minutes.
