Ingredients

1 lb boneless, skinless chicken breasts

1 cup gluten-free panko breadcrumbs

2 large eggs

1/3 cup gluten-free flour

1 tsp salt

1/2 tsp black pepper

1 tsp garlic powder

1/2 tsp paprika

Cooking spray or oil mist


Instructions

1. Slice chicken breasts into cutlets or tenders of even thickness. Pat dry.

2. Set up three bowls: one with seasoned gluten-free flour, one with beaten eggs, and one with panko breadcrumbs.

3. Dredge each chicken piece in flour, dip in egg, then coat in breadcrumbs.

4. Preheat air fryer to 400°F (200°C) for 3 minutes.

5. Arrange chicken in a single layer in air fryer basket. Mist lightly with oil.

6. Cook for 10–12 minutes, flipping halfway through. Chicken is done at 165°F (74°C).

7. Let rest for 2–3 minutes before serving.


Notes
