Ingredients
1 tablespoon olive oil
12 oz andouille sausage, sliced into rounds
1 small onion, chopped
3 cloves garlic, minced
1 tablespoon Cajun seasoning
2 cups chicken broth
1 cup heavy cream
8 oz rotini pasta
3/4 cup grated Parmesan cheese
Salt and pepper to taste
1 tablespoon chopped fresh parsley
Instructions
1. Heat olive oil in a large pot over medium heat. Add sliced sausage and cook until browned, about 3–4 minutes per side.
2. Push sausage to the side and add chopped onion. Sauté for 2–3 minutes until translucent, then stir in garlic and cook for 30 seconds.
3. Stir in Cajun seasoning until evenly coated. Add chicken broth and heavy cream, scraping the pot to release browned bits.
4. Add rotini pasta, stir well, and bring to a gentle boil. Reduce heat, cover, and simmer for 10–12 minutes, stirring occasionally.
5. Once pasta is tender and sauce has thickened, stir in Parmesan cheese until fully melted and combined.
6. Season with salt and pepper as needed. Garnish with chopped parsley and serve immediately.
Notes
For less spice, use kielbasa or smoked turkey sausage instead of andouille.
