- 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
- 1 cup cherry tomatoes (halved)
- 1 bell pepper (sliced, any color)
- 2 garlic cloves (minced)
- 1 tsp paprika
- Salt and black pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish (optional)
Instructions
- Cut chicken into evenly sized pieces. Slice peppers and halve tomatoes. Mince garlic.
- Heat 1 tbsp olive oil in a large skillet over medium-high heat.
- Add chicken in a single layer, season with salt, pepper, and paprika. Sear for 3–4 minutes without moving, then flip and cook until fully cooked (about 6–7 minutes total).
- Push chicken to one side (or remove temporarily). Add remaining oil and garlic; sauté for 30 seconds.
- Add tomatoes and bell pepper. Cook 3–5 minutes until just tender.
- Return chicken to pan if removed. Stir everything together. Taste and adjust seasoning.
